Former Big Spruce executive chef Christian Kruse is taking the reins of the shuttered restaurant at 39 Bridge Street in Richmond. He’s gearing up to reopen the joint this summer in stages, kicking things off with the creemee window set to open by the end of May. The grand reopening is slated for fall, so get ready to chow down on some tasty eats once again!
The Big Spruce had its heyday back in late 2020, dishing out a Mexican-inspired menu that went through a few changes before owner Gabriel Firman decided to close up shop in October 2024. Firman shifted his focus back to his original Richmond spot, Hatchet, but eventually put both restaurants on the market. Enter Kruse, who had previously worked under Firman at both the Big Spruce and Hatchet. The 40-year-old chef has big dreams of running his own show again, especially after snagging a James Beard Foundation award nomination in 2022 while working at Black Flannel Brewing & Distilling in Essex.
Kruse has his sights set on keeping the Big Spruce name alive, along with the restaurant’s unique vibe. He sees himself as carrying the torch that Firman passed to him, aiming to take the joint to new heights. The plan is to start off with classic American sandwiches on the takeout menu, including favorites like fried chicken, pulled pork, chopped cheese, and a mouthwatering smashburger. As the summer rolls on, Kruse will open up the 40-seat bar and dining area, offering up beer, wine, sandwiches, and small plates like fried Brussels sprouts and arancini risotto balls. Private events will also be on the agenda, with special coursed menus available in the cozy 20-seat Parlour Room.
Summer is shaping up to be an extended soft opening for Kruse as he gears up for the big October debut. That’s when the dining room will be in full swing, featuring a lineup of contemporary American dishes to tantalize your taste buds.
